Raw Papaya pulp contains active enzymes Papain as well as Vitamin A, both excellent in exfoliation of dead skin cells. Eating this fruit will make your skin looking young. The water in the fruit will keep your skin hydrated. This pie is a wonderful dessert for a mother’s day brunch or any outdoor event that you are hosting this week-end, as it only takes 1-2 hours to set due to the natural gelatin forming properties of papaya. Be ready to dazzle your guests. They will think that you slaved all day to make this cake.
For the Crust
1 cup ground flaxseeds
1 cup raw almonds
1 cup dates
2 tbsp melted coconut oil
For the Cake Filling
1 1/2 papaya (cut in chunks)
3 tbsp hempseed or flaxseed oil
1 1/2 cups almond milk (or non-dairy beverage)
Organic Wild blueberries (approximately 1 cup)
bananas (approximately 3 large)- cut in coins
1. Mix the crust ingredients in a food processor until the mixture sticks together. Then place this layer at the bottom of an 8 x 8 spring form cake pan and press firmly and evenly.
2. Cover the crust with a layer of banana coins, leaving no space between coins.
3. Spread the blueberries over the banana layer
4. In a blender mix the papaya, omega-3 oil and almond milk in a high-speed blender. Pour the mixture over the blueberry layer. Place the entire cake in the fridge to set for 1-2 hours. Place on a cake tray and remove the side of the spring form pan for a beautiful presentation.
