When you want to enjoy something super easy, quick to make, and flavourful, wrap a few fresh rolls while you blend up a spicy dipping sauce. I dedicate this recipe to all the busy moms out there who may not have the time to go to the health food store or hit up a few different grocery stores for hard-to-find ingredients.
I wrapped the fresh rolls with red clover sprouts (that I sprouted myself), pea sprouts, red pepper, avocado, julienned broccoli and carrots, and red cabbage using rice paper.
Dipping Sauce – enough for dipping 8-10 rolls.
- 1/3 cup olive oil
- 2 tbsp chopped fresh basil
- juice from 1/2 lime
- 1 jalapeño
- 1 tsp tahini
- 1 tsp peanut butter
- 1 tsp maple syrup
- 1 clove garlic
- 1 tsp raw apple cider vinegar
- 1/4 cup water
- salt to taste
Blend all in a high speed blender until smooth. Serve alongside veggie fresh rolls filled with any veggies you have laying around!
