These are super easy to make and are a great snack. The creamy dill topping can be used as a salad dressing (if you add more water) or as a dip (by adding less water). Enjoy!
- 1 cucumber, thick slices
Creamy Dill Sauce
- 1 cup sunflower seeds, soaked 4+ hours
- 1/4 tsp prepared organic mustard
- 1 tsp agave nectar
- 1/2 cup fresh dill
- 2-3 tbsp lemon juice
- 1/2 cup olive oil
- Up to 1/2 cup water (use enough to reach your desired consistency)
- Salt to taste
Blend sauce ingredients in a food processor or high speed blender until fully combined. Spoon onto sliced cucumber and sprinkle hemp seeds on top.
Done in 5 minutes and ready to eat!
