This dessert is inspired by my love for chilli vegan chocolate. I also made 2 different presentations with the same ingredients. This dessert if perfect for that fancy dinner party. Everyone will think that you slaved over the kitchen to make these, but we wont tell me otherwise.
1/4 cup date paste
1/2 cup unpasteurized honey (not raw)
1/4 cup chopped hazelnuts
8 whole hazelnuts
1/4 cup cocoa butter
2 dried chillies (finely chopped)
1/4 cup coconut butter (melted)
Note: To make date paste, blend 1/4 cup soaked dates in 1/4 cup or less water.
Optional toppings for presentation:
Key lime Snowy Layer/glaze:
1/4 cup coconut butter
5 tbsp white agave
juice from 2 limes
2 chunks cocoa butter
For the squares:
Mix all of the ingredients except the coconut butter and honey in a food processor until they are smooth. Slowly add the coconut butter and honey to the food processor. Spread the chocolate mixture into an 8×8 square baking dish lined with parchment paper, sprinkling goji berries down first on the parchment before the chocolate. You could also make these in a spring form pan. Place in freezer for 30 minutes. Melt all of the Key lime snowy layer ingredients in a double boiler (I use a stainless steel bowl over a boiling pot of water). Make sure non of the water enters the bowl of ingredients. Once melted, pour the mixture onto the chocolate layer, sprinkle with coconut flakes and put back into the freezer again for at least 6 hours. The mixture is ready to cut and eat straight out of the freezer!
For the Snowballs:
Mix all of the ingredients except the coconut butter and honey in a food processor until they are smooth. Slowly add the coconut butter and honey to the food processor. Spread the chocolate mixture into an 8×8 square baking dish lined with parchment paper. Place in the freezer for 1 hour, then cut into 16 small squares and place a hazelnut into the centre of each square. Roll the squares into balls with the hazelnut in the center. Place back in the freezer while you prepare the key lime snowy glaze. Place all of the glaze ingredients into a double boiler until they are melted. Take each snowball and with a tong dip the entire ball into the glaze coating all around. Then roll it in the shredded coconut before placing it on a lined tray of parchment paper. Each one will look like a chocolate glazed donut, but taste much better and much more rich in flavour!!
