Blossom Dragon Roll


This recipe contains the perfect combination of crunchy, chewy, and sweet nutty flavours into one big dinner size entrée. Your taste buds will thank me after this one!!

Yields 4 servings

For the Wrap
1-2 bunches collard greens (16 leaves, stems removed)

The Filling
1 small golden beet (spiraled)
1 small red beet (spiraled)
6 oz kelp noodles (soaked in lemon juice and water for 20 minutes)
2 carrots (shredded)
1 cup sunflower sprouts
Cremini mushroom bites (see recipe below)
4 tbsp raisins

Note: If you do not have a spiralizer, you can shred the beets in a food processor instead.

Hemp seed mayo (see recipe below)
Cremini Mushroom Bites
2 cups Cremini Mushrooms (sliced)
2 tbsp raw sesame oil
2 tbsp coconut aminos
1 tbsp maple syrup

Marinate mushrooms in a bowl mixing to coat all of the mushrooms. Mushrooms will absorb a lot of liquid and hold onto the flavours. You can put them like this in the dragon roll or you can dehydrate them for 6 hours to obtain a chewy texture. I like the dehydrated version the best.

Hemp Seed Mayo (Inspired by Mimi Kirks Mayo, with an Asian twist)
1/2 cup cashews (soaked for 4 hours)
1/2 cup hemp seeds
1/2 cup raw sesame oil
1 tsp apple cider vinegar
2 tsp lemon juice
1 tsp agave
1/4 tsp mustard powder
pinch himalayan salt

Blend all of the ingredients in a high-speed blender until smooth consistency.

To assemble the roll…

Layer the collard green strips in a weave pattern, overlapping one another so that there are no holes for the mayo to leak out of. It should resemble a round large burrito wrap with the inside of the greens facing upward. Spread 2 tablespoons of the hemp seed mayo on the collard green wrap. place 1/4 of each of the ingredients into the wrap in this order… red beets, golden beets, kelp noodles, shredded carrot, sunflower sprouts, mushrooms, raisins. To close the roll, fold over the bottom of the roll onto the filling and begin rolling from one side of the roll to the other. Tuck in any collards that stick out. Use a recyclable parchment paper sheet to wrap around the roll to make it less messy to eat. Repeat these steps 3 more times. Your guests will think you ordered from a fancy restaurant, and will not believe that you made this dinner at home!
