Raw Chia Plum Jam

This is the first year that I have ever seen a harvest like this at my parents home. This Raw Plum Jam’RAWks’!!! It tastes great on a dehydrated Kamut bagel with some almond butter.

You will need….

2 cups pitted prune plums
2 tbsp chia soaked in 1/4 cup water for 10 minutes
4 dates
1 tbsp lemon juice
lemon zest from 3 lemons
1 vanilla bean (seeds scraped)

Blend all of the ingredients, except the lemon zest in a high speed blender for a smooth, thick consistency. Place in a mason jar, stir in the lemon zest and store in the fridge. It will thicken over a few hours. It lasts approximately 1 week.
