Mario's Protein Pudding

In the month of June, Juliana, Carissa, and I attended a Raw Vegan Festival in Toronto. It was there that we tasted the best “Sugar Free Chocolate Mousse (pudding)” that we have ever tasted. It can be found on the Sanaview Embrace a Better Life website. Mario’s Protein Pudding is inspired by the recipe on this site, and I can not take full credit for it.

Makes 2 generous servings

Ingredients
1 avocado
1/2 cup soaked dates (Soak for 30 minutes in water)
1/2 cup non-dairy milk (i.e., hazelnut or almond milk)
1 scoop Vega performance Chocolate Protein Powder
2 cherries
2 tsp flaked coconut

Directions
Mix all ingredients in a high speed blender (if using the vitamix, use the tamper to help the ingredients from sticking underneath the blades), or mix in a food processor, until smooth and creamy. Portion the pudding into 2 martini glasses and top each with with 1 tsp shredded coconut and a cherry to serve.

My dad always says that dates are natures candy, and he’s right! The dates in this recipe provide sweetness, and at the same time iron, calcium and potassium. I don’t know of any other candy that has that kind of power!!!
