This recipe is great before a long endurance sport such as running. It will keep your energy for hours and is packed with vitamin C, Omega-3’s, fibre, calcium, iron and easily digestible carbohydrates.
2 tbsp chia seeds
1 orange chopped
1 banana sliced into coins
1/4 cup pumpkin seeds
1/2 cup almond milk (or other non-dairy beverage)
In a single serve bowl mix all ingredients together and add the almond milk. Let the mixture sit for approximately 5-10 minutes to let the chia seeds expand and become soft. Then enjoy! For extra sweetness you can add goji berries or a chopped date, but this is totally optional.
