This dessert is so easy to make and packed with essential oils macro and micronutrients. The best part is that they are so tasty and Mario’s favourite before workout snack. I like using lucuma powder to make this dessert lower glycemic.
2 cups flaked coconut
1/2 cup coconut oil
6 medjooled dates
1/4 cup water mixed with 3 tsp lucuma powder (or sweetener of choice)
1 tsp vanilla extract
1/3 cup cocoa powder
Mix all the ingredients in a food processor.
Use a tbsp or watermelon scooper to spoon small balls of dough onto a baking sheet lined with parchment paper
Place in freezer for 2 hours
This recipe makes 12 cookies. Keep them in the fridge or freezer to enjoy at your leisure!
