Chocolate Coconut Powerballs

This dessert is so easy to make and packed with essential oils macro and micronutrients. The best part is that they are so tasty and Mario’s favourite before workout snack. I like using lucuma powder to make this dessert lower glycemic.

2 cups flaked coconut
1/2 cup coconut oil
6 medjooled dates
1/4 cup water mixed with 3 tsp lucuma powder (or sweetener of choice)
1 tsp vanilla extract
1/3 cup cocoa powder

Mix all the ingredients in a food processor.

Use a tbsp or watermelon scooper to spoon small balls of dough onto a baking sheet lined with parchment paper

Place in freezer for 2 hours

This recipe makes 12 cookies. Keep them in the fridge or freezer to enjoy at your leisure!

  1. Hey Julia, the first time i made these i thought they should be like cookies and made them cookie shaped. The cookie jar emptied way too quickly. Sooo next time i made small balls and rolled some of them in toasted sesame seeds, some i squished between two dried apricot halves and the rest i used to ‘stuff’ pitted medjool dates. it made about 24 ‘dainties’ that looked great on a plate all together.

    • Hey Prunella, I love when you can take one of my recipes and make it even better! Your dainties sound delicious!!! The mix of sweetness from the dates and apricots, the chocolate, the sesame seed and coconut call for a great combination. I hope you will send me a picture next time you make these fancy treats!
